Me and some bloggers traveled in the south side area and visited a place in Trece Martirez, Cavite and discover good food and taste at Republic of Cavite. The restaurant is already 7 years old, but for me it looks new and this amazing discovery spread in my network talking about the mystery dishes and authentic meals created by the Cavitenos. I've been living in Cavite for almost 5 years and never heard of this place before, but now I've been and it's already embedded in my taste buds that you should check the place and its food whenever you are travelling to or from Tagaytay or in Cavite.
The amazing titles or name of their food really shows that is descriptive and will make you bite and taste each of each to find out why they have that kind of weird name. Below are the foods that we ate and did a tasting event with Republic of Cavite Restaurant and Town's Delight Caterer.

The Republic of Cavite resembles a replica of the historical Emilio Aguinaldo's house in Kawit, Cavite. The Republic of Cavite sometimes is mistaken to be the real thing, but it is located in Trece Martirez, so don't get confused if you seen this along the highway and behind the Municipal hall of Trece Martirez.
Thai Rice with shrimps, corns, peas and pineapple. I enjoyed eating the thai rice because it is a lot more tastier, but if you are in a diet or want to try other flavors, try the basil rice with green herbs.
Fish and Tofu, its a mix of breaded fish fillet cubes and tofu, all you have to do is find the tofu and fish, because they resemble the same shape and size.
Pastel de Lengua is my all time favorite, and because that I miss lengua after graduating from college, I just met another fine meal and this is my favorite. Lengua is cut in cubes mixed with carrots and sausages.
Maja Maiz tastes so special, I don't eat maja in this kind of shape, but it is alot easy to eat, chew and digest, you can taste the corn at the each end of your bite.
Grilled eggplant salad, I just love the mix and variety of the ingredients, I love eggplants in Cavite and this one made it a little bit more sosy if you like salad in your meal.
Onde Onde, a puto like rice food. oh boy. I forgot to taste this!
Lihim ni Lola, this puto shaped rice cake is the most popular dessert. The secret is inside the puto, all you have to do is take a bite and discover the ingredients on each Lihim ni Lola.
Puto Pao, one of my favorite dessert, best matched with hot coffee or cold salabat drinks. There's a meaty goodie in the middle of the Puto Pao.
Kinulot na Page, for me its an exotic food, because its my first time to eat a stingray meat. It is tasty and like I'm eating a crab's meat. Mixed with coconut milk and malunggay leaves.

Adobo Manok Kabitenyo, it taste different from a regular adodo, a lot more sweeter and not that salty. I like the sauce mix and chicken taste of a different adobo style.
Peche Peche, ahhh this one is real squirter! don't eat it using your spoon, or dont event slice it, there's a liquid like thing inside and it will squirt on you if you sliced it. All you have to do is grab one and bite it, you'll taste the yummyness of what's inside. Lace did slice it and we laugh when we saw she got squirted by a Peche Peche.

Cafe Amadeo, a strong black coffee. I'm now a big fan of this kape.
