Here’s a recipe from Grand Hyatt Bali, I just got a copy of this recipe after
attending their Sedap Indonesia: Balinese Delights food festival at Market Café,
Hyatt Regency Casino and Hotel Manila few weeks ago.
Sate Udang
”prawn
satay”
Ingredients:
600 g(115 lb) large prawns, peelded
1 cup
seafood spice paste (bumbu seafood)
Fresh lemon grass, cleaned and cut 15 cm
(6 in) long
Preparation:
1. Combine prawns and seafood spice paste and mix well.
2.
Cover and marinate for 24 hours in the refrigerator.
3. Speak each prawn on
the thinner end of a lemon grass stalk.
4. Grill over very high heat, using
either coconut husk or charcoal.
Note:Lemon grass imparts a wonderful
flavor to the inside of the prawns; if it is not available, substitute with
normal satay skewers.
