Recipe from Grand Hyatt Bali: Sambal Mentah (raw sambal)

Here’s a recipe from Grand Hyatt Bali, I just got a copy of this recipe after attending their Sedap Indonesia: Balinese Delights food festival at Market Café, Hyatt Regency Casino and Hotel Manila few weeks ago.

Sambal Mentah
”raw Sambal”

Ingredients:
750g shallot, sliced
50 gr green chili, sliced
100 gr lemon grass, sliced
5 gr shrimp paste,roasted
5 gr kafir lime (lemon juice)
5 gr salt

Preparation:
1. Mix all ingredients and add cooking oil and lemon juice
2. Ready to serve
